Our final interview is with Brewery Market co-founder and Bar Towel Founder, Cass Enright and his Ottawa counterpart, Taralyn Marshall.
Ottawa Beer Events: Can you tell us about yourself and how you got involved with The Brewery Market?
Taralyn Marshall: I moved to Ottawa, from Toronto last year. Cass had been running successful Brewery Market's in Toronto for years, and I knew it was something that needed to happen in Ottawa. Beer Gardens? Yes, please!
How did the idea of the Capital Mashup come up?
Cass Enright: When we got a sense of our Toronto and Ottawa schedules, the July events were very close together (Jul 1 in TO, Jul 7 in Ott), so we started to think it would be great if the events could be tied together somehow. And seeing that it was the week of Canada Day, we thought something around celebrating each cites' beer scenes together would be ideal. Hence the idea of the Mashup, to bring together brewers from each city to do the collaboration beers.
How were the breweries chosen to be paired up?
Cass: The guys from GLB knew the guys from Cassel, so we paired them up. BtP was the newest brewery in Ottawa, and Indie was one of the newest in Toronto as well, so we paired them together. Then we put Broadhead together with Amsterdam. Everyone's collaborations went great and the brewers from both cities got to meet each other which is great for the Ontario beer scene.
Hintonbuger will be serving up food on July 7, will they be doing any food mashups?
Taralyn:
Hintonburger are known for infusing delicious beer into their already scrumptious burgers – taking them over the top. Last year Hintonburger grilled up some HogsBack back bacon burgers, and Beau's burgers. We're anticipating something similar on July 7, though Thomas from Hintonburger likes to keep us anticipating what he'll be doing – so we'll have to show up to find out!
Will the August and October Brewery event's have a theme?
Taralyn: I always love when the events are worked to a theme.
Cass: We're working on it. We've sketched out the brewery lineups for each event, so once we get through the Mashup we'll get to work on the next ones!
Which collaboration are you looking forward to trying the most?
Taralyn: This question is too hard! I've been counting the days to these collaboration brews, and couldn't pick just one now!
Cass: Toronto has tried them all and he can report that they are all delicious. If the weather is warm the GLB/Cassel Cranberry Saison and Amsterdam/Broadhead Wheat Pale Ale with Lemon will be a perfect fit. But the Indie/BtP Golden Devil Belgian Ale packs a punch at 7.77% and is just awesome.

Our third interview is with Shane Clark of Beyond the Pale Brewing Co. For the Capital Mashup he was teamed with Jeff Broeders from Indie Ale House in Toronto. Beyond the Pale opened in December of 2012 with four flavour packed brews and are already going through an expansion (which included borrowing some fermenting tanks from Beau's) to keep up with demand.
Ottawa Beer Events: Can you tell us about the collaboration beer?
Shane Clark: Belgian Golden Ale.
How do brewers collaborate on beers?
Can you explain the process (if there is one)?
There's really no hard and fast process about
how to collaborate. Our recipe was mostly developed by email and some final
decisions were made on the day of.
How did you like brewing in their facility?
It was a fun day. Great folks and interesting
to see how other people go through a typical brew day.
Were there any challenges? Did anything throw you for a loop?
Not really. Pretty smooth brew day.
What other beers will you have available at the Capital Mashup?
Pink Fuzz, Rye Guy, Darkness, HOYF and a couple
of casks.

Our second interview is with Josh Larocque, head brewer at Broadhead Brewing Company in Ottawa. For the Capital Mashup he and brewer Carney Kilian were teamed with Iain McOustra of Amsteram Brewery. Broadhead brews six regular beers and the occasional seasonal out of their DIY brewery in an industrial park off Hunt Club. This past October they moved to a larger spot in the same warehouse and increased production. Now there won't as many fights over the last growler of Wild Card Ale.
Ottawa Beer Events: Can you tell us about the collaboration beer?
Josh Larocque: The Amsterdam/Broadhead
collaboration was a lemon-lime wheat beer (light on the wheat,) fermented with
a clean yeast. The lemon flavour is from fresh lemon zest (bought from
the old Maple Leaf Gardens, which is now a Loblaws!) and peeled while waiting
for the wort to come up to a boil. The lime flavour is from ample
additions of Sorachi Ace hops late in the boil.
Collaborations are as
unique as the breweries themselves. Perhaps even more so, given that it
typically falls on only a couple individuals at the brewery to pull it off.
In this case, the Amsterdam head brewer Iain McOustra and I emailed back
and forth on a few ideas before settling on a style. In true microbrew
fashion (we always seem to leave things till the last minute) we were still
planning the final grain bill as I jumped into my car and headed down to
Toronto. When we (Carney Kilian [Broadhead brewer] and I) arrived at the
Amsterdam brewery, Iain had already prepared the grains based on his equipment,
but left the wheat additions variable and it was a gametime decision as to what
ratio we wanted. We quickly decided, fired up the mash then got on to
important things like sampling beer directly out of the fermenters (even if it
was 11AM!)
How did you like brewing in their facility?
Brewing in the
Amsterdam facility was a great experience. Their operation is much larger
than Broadhead, about 5 times the brewhouse output, and they brew much more
frequently than us. The collaboration brew took place on their pilot
system, which at the scale of the brewery around us, made it feel like we were
homebrewing again! It made for a fun and relaxing brew with some great
guys.
Were there any challenges? Did anything throw you for a loop?
There weren't really
any challenges, everything went pretty smoothly. Just the typical little
things, like the propane tanks on the brewhouse were swapped, so trying to
light the mash burner when it was really the boil burner that had gas!
What other beers will you have available at the Capital Mashup?
At the Captial Mashup
we will have a couple of our other regular brews. Varieties will depend
on our current stock at the time.

Our fist interview is with Mario Bourgeois, head brewer at Cassel Brewery Company in Casselman, Ontario (40 minutes outside Ottawa). In their first year they've produced 7 brews including their flagship Golden Rails Honey Brown and Railroad Special seasonal, Maple Rye. Recently the nanobrewery won a $55,000 grant from Prescott-Russell Community Development Corporation (PRCDC) through the Eastern Ontario Development Program to help expand their business. For the Capital Mashup, Mario was teamed up with Mike Lackey, brewer at Great Lakes Brewery.
Ottawa Beer Events (OBE): Can you tell us about the collaboration beer?
Mario Bourgeois (MB): We did a Cranberry Saison, 30gal of it on a pilot system.
Did you get to pick how you collaborated with? How did you get paired up with Great Lakes Brewery?
No, Great Lakes Brewery (GLB) was offered to us, being a big fan of the 666 IPA I didn't hesitate a second!
How did you like brewing in their facility?
Was a very fun and pleasant experience to create a beer with another brew master; share stories, experiences and, of course, a few laughs! Mike Lackey is from a similar background as me – we learned brewing on the fly. I was also inspired by the amount of pilot batches Mike is doing, I will start to do the same to have a few more recipes in the pipeline.
Were there any challenges? Did anything throw you for a loop?
The only challenge was what to do! Mike has saison in his mind which I had never brewed myself, and then we went over the spices and adjunct supplies that we had (a lot of it!) and decided to go cranberry. It was a mutual decision. As for brewing it, besides being a system I never brewed on, we both know how to make beer 😉
What other beers will you have available at the Capital Mashup?
We'll have our Golden Rails Honey Brown, Hopper Car IPA and also our White Fog Witbier.

The Capital Mashup, is a very special event, featuring exclusive
collaboration beers between some of the finest brewers in Toronto and
the Ottawa area.

Indie Alehouse. Brewers will be serving up the collaboration beers, as
well as their classics in Parkdale Park on Sunday, July 7.
Hintonburger will be there flipping patties to feed our bellies. Pascale's Ice Cream will be there cooling us down with sweet treats.
